Meet Joé Chandellier, the wizard of a 5.5ha farm in Languedoc. He's in the cool club of French natural winemakers, doing things organically, with wild yeast, and keeping it real—no fining or filtering here. His 'Alluvions' is like a spicy, medium-weight red with a touch of wildness that's just the right kind of rebellious.
It's made with 60% Carignan and 40% Aramon, plucked from 90-year-old bush vines chilling in deep silt soils. They threw a party together, co-fermented and macerated for 5 days in a carbonic dream, then hung out in a neutral fibreglass vat. All organic, wild fermented, unfiltered, unfined, and just a smidge of 25mg/L sulphites added at bottling. Clocking in at a smooth 12.5% alc/vol—this bottle is like Joé's signature in liquid form.
